Covers, flow and the kitchen line

Seat count, service routes, the pass, waste, deliveries and staff movement are resolved before anything is styled. Get this wrong and no amount of finish will save the room on a busy evening.

Light as the main material

Hospitality lives and dies by light levels. Warm, layered, tightly controlled — food and faces read well, the room changes character between lunch and late evening, and nothing is lit flat.

Designed to be photographed, not styled for it

One strong spatial idea — a courtyard, a counter, a long shared table — carries a place further than a wall of props. It also survives a change of menu.
